Southern fried potatoes are so yummy yet so easy to make with only a few ingredients. Tender fried potatoes and onions with the perfect amount of crispy on the outside. A perfect side dish for breakfast, brunch or dinner!

12 inch cast iron skillet with lid or skillet with lid

Ingredients
2tablespoonscanola oil
1sweet onionchopped
2russet potatoeschopped into ½- 1 inch cubes
½tablespoongarlic powder
½teaspoonsalt
½teaspoonpepper
1scallionchopped (optional)
Instructions
Peel and dice potatoes into ½-1 inch cubes. Chop Onions.
Add canola oil to cast iron skillet over medium high heat
Add onions and potatoes to the cast iron skillet. Add garlic powder, salt and pepper. Stir, then cover for 3 minutes.
Remove the lid and stir again, making sure to rotate the potatoes that were on top to the bottom so that they can get browned. Cover and cook for another 3 minutes.
Remove the lid and give the potatoes and onions another stir, making sure to rotate the potatoes arounds so that they all get browned. If the potatoes are still not tender, go ahead and cover and cook for another 3 minutes.
Remove the lid, give those fried potatoes one last stir, and check the tenderness by pressing a fork down on top of one of the potatoes. If the potatoes are tender then you are all done and ready to enjoy your delicious southern fried potatoes! Top with scallions for extra flavor.
