Easy Air Fryer Mini Pepper Pizzas

Ingredients

  • 4 mini sweet peppers
  • 8 teaspoons pizza sauce
  • ½ cup shredded mozzarella cheese
  • 8 slices pepperoni
  • 1 teaspoon Italian seasoning

Instructions

Air Fryer Instructions:

  • Preheat the air fryer to 400 degrees Fahrenheit and set the timer for 2 minutes.
  • Leaving the stems intact, cut the peppers in half. Cut out and discard the seeds and white membrane from the peppers.
  • Chop the pepperoni slices into one-fourths.
  • Fill each pepper with 1 teaspoon of pizza sauce. Then top with mozzarella cheese.
  • Add 2 to 3 drops of pizza sauce on top of the cheese, then stick 2-3 pepperoni pieces on top (I do this so that the pepperoni does not fly off while cooking in the air fryer).
  • Sprinkle each pepper with Italian seasoning.
  • Place peppers in the air fryer and cook for 1-2 minutes until the cheese has melted. Be sure to check on them halfway through.
  • Carefully remove peppers from the air fryer. Let cool, then enjoy!

Oven Instructions:

  • Preheat oven to 400 degrees Fahrenheit.
  • Leaving the stem intact, cut the peppers in half. Remove and discard the seeds and white membrane.
  • Chop the pepperoni slices into one-fourths.
  • Fill each pepper with 1 teaspoon of pizza sauce, then top with mozzarella cheese and pepperoni.
  • Add peppers to a parchment paper lined baking sheet and bake for 7 to 10 minutes until the cheese is hot and bubbly.

Storage And Reheating Instructions:
  • Store leftovers in the refrigerator in an airtight container for up to 3 days.
  • To reheat, preheat the air fryer to 360 degrees Fahrenheit and heat for 1-3 minutes until hot.
Pro Tips:
  • When cooking these in the air fryer be sure to add drops of pizza sauce on top of the cheese and place each pepperoni piece on top of a drop of pizza sauce. This will help prevent the pepperoni from flying off during the cooking process.
  • The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, you will need to adjust the cook time based on the air fryer you are using.
