Easy Air Fryer Sour Cream and Onion Potato Rounds

These Air Fryer Potato Rounds are easy to make and loaded with flavor. Seasoned roasted potato slices are topped with melty mozzarella cheese, bacon, green onion, and French onion dip. Easy to make as an appetizer or side!

Ingredients

  • 2 tablespoons olive oil
  • 1 medium russet potato
  • ½ cup shredded mozzarella cheese
  • ¼ cup bacon crumbles cooked
  • ¼ cup French onion dip
  • 1 stalk green onion sliced
  • teaspoon onion powder
  • teaspoon salt
  • teaspoon pepper
  • teaspoon dried parsley flakes

Instructions

Air Fryer Instructions:

  • In a small dish, mix together the olive oil, onion powder, parsley, salt, and pepper.
  • Slice the potatoes into ¼ inch thick rounds.
  • Brush each side of the potato rounds with the olive oil mixture.
  • Preheat the air fryer to 380 degrees Fahrenheit and set the timer for 12 minutes.
  • Add the potato rounds to the air fryer in a single layer. Cook for 12 minutes, flipping them halfway through.
  • Once the potatoes are done. Open the air fryer basket and top the potatoes with the mozzarella cheese and bacon crumbles.
  • Cook for an additional minute until the cheese has melted.
  • Remove the potato slices from the air fryer and top with French onion dip and green onion slices.

Oven Instructions:

  • Preheat oven to 400 degrees Fahrenheit.
  • Prepare potatoes as directed in the recipe.
  • Add potatoes to a parchment paper lined baking sheet and bake for 15-20 minutes. Flip the potatoes halfway through.
  • Carefully remove the potatoes from the oven and top with cheese and bacon. Bake for an additional 5 minutes until the cheese has melted.
  • Remove potatoes from oven and top with French onion dip and sliced green onion.

Storage And Reheating Instructions:
  • Store leftovers in the refrigerator in an airtight container for up to 3 days.
  • To reheat, preheat the air fryer to 360 degrees Fahrenheit and heat for 1-3 minutes until hot.
Pro Tips:
  • The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, you will need to adjust the cook time based on the air fryer you are using.
  • If you have an air fryer that tends to blow cheese and toppings off, just use the residual heat leftover from cooking the potatoes to melt the cheese. Your air fryer will still be warm and the fan will be off.
  • Save time by using store bought bacon crumbles.
