Easy Cajun Fried Corn

This Cajun Fried Corn is a quick and easy side dish that can be ready in just 15 minutes! Sweet corn is fried in butter, seasoned with Cajun seasoning, and finished with little bit of heavy cream for the most delicious Southern fried corn.

Equipment

  • Skillet (I used a cast Iron skillet, but this recipe will work in any skillet)
  • Stirring Spoon

Ingredients

  • 4 tablespoons butter unsalted
  • ¼ cup yellow onion chopped into tiny pieces
  • ¼ cup red bell pepper chopped into tiny pieces
  • 2 cans corn drained
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Cajun seasoning
  • ¼ cup heavy whipping cream

Instructions

  • In a medium skillet, melt the butter over medium heat. Add the onion and red bell pepper to the skillet and cook until soft. Stir occasionally for 2 to 3 minutes.
  • Add the corn to the skillet and stir until the corn is well blended with the butter.
  • Stir in the garlic powder, black pepper, and Cajun seasoning. Then let the corn cook for 5 minutes, stirring frequently.
  • Stir in the heavy whipping cream, then let the corn simmer. Stir frequently until the liquid slightly thickens, about 5 minutes.
  • Serve as a side dish for dinner, or for the holidays. This will be a favorite!

Notes

*Store leftovers in the refrigerator in an airtight container for up to 4 days. Leftovers can be heated on the stove or in the microwave.
*Add salt as needed. I didn’t add salt to my recipe, but you can sprinkle a pinch of salt on the corn if preferred. Some Cajun seasoning blends like the one I used come with salt in them so I didn't add any additional salt to the corn.
*Add extra Cajun seasoning if you would like to make this extra spicy.
*Fresh corn cut from the cob can be used as well as frozen corn.
