Line a sheet pan with parchment paper and set it aside.
To a large bowl, add the olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, ground mustard, and dried parsley flakes. Stir until well blended.
Pat the chicken dry using a paper towel.
Add the chicken to the bowl with the seasoning and oil mixture. Toss until well coated.
