These Air Fryer Fingerling Potatoes are perfectly seasoned on the outside with a creamy and delicious inside. So good, you’ll want to make them again and again!
Cut the fingerling potatoes in half lengthwise and set aside.
To a large bowl, add the olive oil, melted butter, salt, pepper, garlic powder, smoked paprika, and dried parsley. Stir until well blended.
Add the fingerling potatoes to the bowl and toss until well coated.
Preheat the air fryer to 380 degrees Fahrenheit.
Once the air fryer is ready, add the fingerling potatoes to the air fryer, mostly in a single layer.
Cook for 16 minutes until crispy on the outside and soft in the middle. Flip them halfway through.
Once done, remove them from the air fryer, let cool, then enjoy!

Storage And Reheating Instructions:
Store leftover potatoes in the refrigerator for 3 to 4 days.
Reheat in a preheated air fryer of 380 degrees for 3 to 5 minutes until warm throughout.
Pro Tips:
The air fryer used in this recipe was the Instant Vortex Plus 6 quart. Since all air fryers cook differently you may need to adjust the cook time according.
Make sure to cook the potatoes in a single layer. I have a little overlap with the potatoes and that was okay, but they should mostly be cooked in a single layer for the best results.
