Irresistible Air Fryer Fingerling Potatoes

These Air Fryer Fingerling Potatoes are perfectly seasoned on the outside with a creamy and delicious inside. So good, you’ll want to make them again and again!

  • Cut the fingerling potatoes in half lengthwise and set aside.
  • To a large bowl, add the olive oil, melted butter, salt, pepper, garlic powder, smoked paprika, and dried parsley. Stir until well blended.
  • Add the fingerling potatoes to the bowl and toss until well coated.
  • Preheat the air fryer to 380 degrees Fahrenheit.
  • Once the air fryer is ready, add the fingerling potatoes to the air fryer, mostly in a single layer.
  • Cook for 16 minutes until crispy on the outside and soft in the middle. Flip them halfway through.
  • Once done, remove them from the air fryer, let cool, then enjoy!

Notes

Storage And Reheating Instructions:
  • Store leftover potatoes in the refrigerator for 3 to 4 days.
  • Reheat in a preheated air fryer of 380 degrees for 3 to 5 minutes until warm throughout.
Pro Tips:
  • The air fryer used in this recipe was the Instant Vortex Plus 6 quart. Since all air fryers cook differently you may need to adjust the cook time according.
  • Make sure to cook the potatoes in a single layer. I have a little overlap with the potatoes and that was okay, but they should mostly be cooked in a single layer for the best results.
