Slice the sweet potato into ¼ inch thick potato rounds.
To a medium bowl, add the olive oil, cinnamon, and salt. Stir until well blended.
Add the sweet potato slices to the bowl and toss until well coated.
Preheat the air fryer to 350 degrees Fahrenheit.
Once the air fryer is ready, add the sweet potato slices to the air fryer in a single layer and cook for 15 minutes. Flip the slices halfway through.
Once done and the sweet potato slices are soft in the middle and slightly browned on the outside, remove them from the air fryer, let cool, then enjoy!

Storage And Reheating Instructions:
Store leftovers in the refrigerator in an airtight container for 3 days.
Reheat in a preheated air fryer at 350 degrees Fahrenheit for 2 to 4 minutes.

The air fryer used in this recipe was the Instant Vortex 6 quart. Since all air fryers cook differently, you may need to cook these for less or a little more time depending on what air fryer you use and the thickness of the slices. Always check on your food halfway through the cooking process.
Be sure to slice the potatos so that they are ¼ inch thick. Any thinner and you may end up with hard chips.
