Easy Baked Potato Slices Recipe

These baked potato slices are easy to make and full of flavor! Make them as a side dish, snack, or a quick appetizer. They are perfectly crispy on the outside with a tender center.

  • Make sure the oven rack is in the center position and preheat the oven to 415 degrees Fahrenheit.
  • Slice potatoes into ¼ inch thick rounds and pat both sides of each round dry with a paper towel.
  • To a large bowl, add the olive oil, salt, pepper, garlic powder, onion powder smoked paprika, and Italian seasoning. Stir until well blended.
  • Add the potato slices to the bowl and toss until well coated.
  • Line a sheet pan with parchment paper for easy clean up and place the potato slices on the sheet pan in a single layer. Bake for 20 minutes. Flip, then bake for another 10 to 15 minutes until the outside is golden and the inside is soft.

Recipe Variations And Substitutions:
  • Add Cheese – Add shredded Parmesan, cheddar, or mozzarella to make cheesy potato slices. Cheese can be added during the last 5 minutes of baking.
  • Loaded Baked Potato Slices – Add cheese, bacon crumbles, and sour cream like I do in my air fryer loaded potato slices.
  • Different Seasonings – Oregano, dried parsley flakes, or dried thyme all make good seasonings to try. Cajun seasoning or a touch of cayenne pepper seasoning add a bit of spiciness.
  • Add Butter – Use melted butter instead of olive oil for a richer flavor.
  • Different Types Of Potatoes – You can use Russet, Yukon Gold, or large red potatoes.
Storage And Reheating Instructions:
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 350 degrees Fahrenheit for 10 minutes until warmed throughout. If using an air fryer, reheat at 380 degrees Fahrenheit for 3 to 5 minutes until warm throughout.
Pro Tips:
  • Slice the potatoes thinner for a chip-like texture.
  • Patting the potatoes dry before seasoning helps with crispiness.
  • I like to slice my potatoes ¼ inch thick. This results in a soft center with crispy edges. If you would prefer chip-like slices, then slice the potatoes into ⅛th or 1/16th inch slices for a crisp center and outside.
