    These homemade air fryer potato slices are loaded with melted cheese, crispy bacon, green onion and sour cream. They make a great appetizer or a fun side dish that you’ll just love to make over and over again!

    No, you do not need to boil potatoes before putting them into the air fryer.

    What To Serve With Loaded Baked Potato Slices:

    These loaded potato slices can be served as an appetizer for game days, parties, or other get togethers. They also make a fun dinner side dish. You can serve them with:

    • Roasted Chicken
    • Steak
    • Chicken Tenders
    • Meatloaf
    • Salmon
    • Salisbury Steak
    • Fried Cabbage with Sausage and Peppers
    • Hot Dogs
    • Hamburgers

    Equipment Needed:

    • Air Fryer

    Ingredients:

    • Russet Potato
    • Shredded Colby Jack Cheese - Shredded Cheddar or Shredded Monterey Jack would work as well
    • Crumbled Bacon - Cooked bacon chopped into pieces, or you can use store bought bacon pieces
    • Green Onion/Scallions
    • Sour Cream
    • Olive Oil
    • Seasonings: Salt, Pepper, Garlic Powder

    Instructions:

    1. Start by preheating your air fryer to 400 degrees Fahrenheit and setting the timer for 12 minutes.

    2. While the air fryer heats up, slice the potato into ¼ inch thick slices.

    3. To a medium bowl, add the potato slices and drizzle them with olive oil. Then add the salt, pepper, and garlic powder. Stir until the potato slices are well coated.

    4. Add the potato slices to the air fryer in a single layer and cook for 12 minutes, flipping them halfway through.

    5. Once the potatoes are done, remove the basket from the air fryer and add a pinch of cheese to each potato slice, then a few bacon pieces, and top with a little more cheese. Air fry for another 1-2 minutes until the cheese has melted.

    Shredded cheese, bacon, and more shredded cheese added to the cooked potato slices and placed back into the air fryer for 1 minute at 400 degrees Fahrenheit.

    6. Remove the potato slices from the air fryer, place on a serving dish, and top with sour cream and green onions.

    Recipe Variations:

    • Don’t have bacon? Leave it off.
    • Olive oil - Avocado oil, melted butter, or whatever cooking oil you usually use would work.
    • Want plain air fryer potato slices? Leave off the toppings.
    • Air fryer potato slices with cheese - Leave of the bacon, sour cream and green onions.
    • Air fryer parmesan potato slices - Use parmesan cheese instead of cheddar.

    Oven Instructions:

    1. Preheat oven to 400 degrees Fahrenheit.

    2. Prep the potatoes as indicated in the recipe card below.

    3. Once the oven is preheated, place the potato slices in a single layer on a baking sheet. Bake for 20-25 minutes until slightly brown on the outside and tender in the middle. Be sure to turn them over halfway through.

    4. Once the potatoes are done, top the potatoes with bacon and cheese and place back in the oven until the cheese has melted. This is usually about 5 minutes.

    5. Remove from oven and top with sour cream and green onions.

    Storage and Reheating Instructions:

    • Store leftovers in the refrigerator in an airtight container for up to 4 days (minus the sour cream).
    • Reheat in the air fryer at 360 Fahrenheit for 1 to 2 minutes until warm.

    Pro Tips:

    • Be sure to cut the potato slices the same thickness to ensure that they all cook evenly.
    • Cut slices at least ¼ inch thick, anything thinner will cook faster and become hard like a potato chip.
    • Put the potatoes into the air fryer basket in a single layer. This will allow for the potatoes to cook evenly.
    • If your air fryer has a broil option like my Instant Vortex Plus you can use that to melt the cheese if you prefer.
    • The air fryer I used to test this recipe was my Instant Vortex Plus 6 quart. You will need to adjust the timing of this recipe based on the air fryer you are using. Be sure to check on the potatoes halfway through the cooking process. The potatoes are done when they are slightly browned on the outside and tender in the middle.

        Hi Tonya, I haven't tried this recipe using red potatoes before so I am not sure how they would turn out using the time and temp of this recipe.
