What Temperature Should Steak Be Cooked To?
The steaks in my recipe below are for medium doneness. To achieve your desired doneness, use a meat thermometer or instant read thermometer to measure the internal temperature of the steak throughout the cooking process. Here are the recommended temperatures for each degree of doneness as provided by Certifiedangusbeef.com:
- Rare - cool red center - 125 degrees Fahrenheit
- Medium Rare - warm red center - 135 degrees Fahrenheit
- Medium - warm pink center - 145 degrees Fahrenheit
- Medium Well - slightly pink center - 150 degrees Fahrenheit
- Well Done - 160 degrees Fahrenheit
How Long Should I Air Fry My Sirloin Steak?
How long you air fry your steak depends on what level of doneness you want. Here is a guide for cooking a 1 ½ inch thick sirloin at 400 degrees Fahrenheit.
- Rare - 8 minutes
- Medium Rare - 10 minutes
- Medium - 12 minutes
- Medium Well - 14 minutes
- Well Done - 16 minutes
Q&A:
Overcooking steak can make it chewy and dry. This includes steaks that are cooked over the temperature of 165 degrees Fahrenheit.
Yes, this recipe works for different cuts of boneless steak like ribeye, New York Strip, or filet mignon. If using bone-in steak, then you will need to adjust the cooking time as bone-in steaks take longer to cook.
I recommend using steaks that are at least 1 inch to 1 ½ inches thick for this best results, however thinner steaks can be used. Just keep in mind that the cook time will be shorter, and you may not get any kind of browning on the outside of the steak because of the shorter cook time.
Equipment Needed:
- Air Fryer
Ingredients:
- Sirloin Steak - I recommend that you use top sirloin steaks (choice or prime grade) for the best results. Before cooking, remove the steaks from the refrigerator and let them set at room temperature for 30 minutes. My steaks were 1 ½ inches thick. Use steaks that are at least 1 inch thick.
- Olive Oil - Used to lightly coat the steaks. This helps the steaks brown up nicely.
- Salt - I recommend using course kosher salt or course sea salt.
- Ground Black Pepper
Air Fryer Instructions:
1. Remove steaks from the refrigerator and let set at room temperature for 30 minutes.
2. After 30 minutes, preheat air fryer to 400 degrees Fahrenheit.
3. While the air fryer heats up, pat the steaks dry on both sides with a paper towel.
4. Brush a light layer of olive oil onto the steaks on both sides.
5. Generously season both sides of each steak with salt and pepper. Be sure to press the seasonings into the steak so they remain on the steak when flipping them over and transporting them to the air fryer.
6. Add the steaks to the air fryer in a single layer and cook for 6 minutes.
7. Flip the steaks and cook for an additional 6 minutes until the internal temperature is 145 degrees Fahrenheit for medium. See notes below for additional doneness temperatures.
8. Remove steaks from the air fryer and let rest for 5 minutes.
Recipe Variations And Substitutions:
- Salt - I recommend using kosher salt, however, if you don’t have kosher salt, then I recommend using a course sea salt.
Storage And Reheating Instructions:
- Store leftovers in the refrigerator in an airtight container for 3 to 4 days.
Pro Tips:
- Bring steaks to room temperature by letting them sit out for 30 minutes prior to cooking. This is to ensure that the steaks cook evenly.
- It’s important to preheat your air fryer. This helps the steak get the nice browned exterior that we all know and love.
- Pat steaks completely dry before cooking so the outside can brown and not steam.
- Every steak will have a different cook time based on thickness. It’s best to use an instant food thermometer to measure the temperature for your desired doneness.
- Do not use parchment paper.
- Make sure the steaks are spread out while cooking, do not overlap.
