    Ingredients

    Southern fried potatoes are just potatoes and onions fried in oil while covered until they are crispy on the outside and tender on the inside. That's it!

    Do I need to use a skillet with a lid?

    Yes, you absolutely need to have a skillet with a lid for this recipe. When you place the lid on top of the cooking potatoes it creates a steam that softens the potatoes and cooks them fast. And I'm all about speed as a busy mama with 3 little ones!

    What goes with southern fried potatoes?

    For breakfast, southern fried potatoes go great with a side of bacon, breakfast sausage or smoked sausage and eggs. For brunch, potatoes and onions make a great side dish to an omelet. For dinner, they go great with salmon patties, pork chops, fried cabbage with sausage and peppers or hamburger steaks.
    At my house, a favorite combo is fried potatoes and onions, topped with 2 fried eggs, cheese, sour cream and scallions with a side of bacon and ketchup for dipping. We also like them covered with sausage gravy topped with 2 eggs over medium. The possibilities are endless when it comes to how you choose to dress up your fried potatoes.

    Instructions

    1. Peel and dice potatoes into ½-1 inch cubes. Chop onions.

    2. Add canola oil to cast iron skillet over medium high heat

    3. Add onions and potatoes to the cast iron skillet. Add garlic powder, salt and pepper. Stir, then cover for 3 minutes.

    4. Remove the lid and stir again, making sure to rotate the potatoes that were on top to the bottom so that they can get browned. Cover and cook for another 3 minutes.

    5. Remove the lid and give the potatoes and onions another stir, making sure to rotate the potatoes arounds so that they all get browned. If the potatoes are still not tender, go ahead and cover and cook for another 3 minutes.

    6. Remove the lid, give those fried potatoes one last stir, and check the tenderness by pressing a fork down on top of one of the potatoes. If the potatoes are tender then you are all done and ready to enjoy your delicious southern fried potatoes! Top with scallions for extra flavor.
