This cucumber salad recipe is an easy and refreshing side dish for cookouts, potlucks, or dinner! It's a simple, yet flavorful salad that has sliced cucumber, fresh dill weed, green onions and an easy homemade vinegar dressing.

Serve this salad with air fryer BBQ chicken, crispy chicken drumsticks, or air fryer thin chicken breast.

Cucumbers are made up of over 90 percent water, so they will release some water. Use a large slotted spoon when serving this dish to drain the excess liquid.

This salad goes great served with my air fryer BBQ chicken drumsticks, air fryer sirloin steak, or air fryer chicken wings. This is also a great side dish that you can whip up for any quick and easy weeknight meal.

  • Cucumbers - Green house, English, or garden cucumbers work best.
  • Apple Cider Vinegar - White wine vinegar can be used instead, if that's what you have on hand.
  • Dill Weed - Dried dill weed can be used if you don't have fresh dill weed.
  • Green Onions or Scallions - Fresh chives can be used as a substitute.
  • Honey - Use 100 percent pure honey.
  • Salt and Pepper - Season to taste.

Instructions:

1. Slice the cucumbers into thin rounds. Slice the green onions and chop the dill weed.

2. To a large bowl, add the apple cider vinegar, honey, salt, pepper, green onions, and dill. Stir until well blended.

  • Dried dill weed can be used if you donโ€™t have fresh dill weed.
  • Fresh chives or scallions can be used if you donโ€™t have green onions.
  • White wine vinegar also works in this recipe if you donโ€™t have apple cider vinegar.

Storage And Reheating Instructions:

  • This salad is best when served on the same day that you make it, but you can make it up to 24 hours in advance. I wouldn't make it more than 24 hours in advance as the cucumbers will become soggy.
