Equipment Needed:
- Air Fryer
Ingredients:
- Olive Oil - Used to coat the zucchini fries and hold the seasoning.
- Zucchini - I used two medium sized zucchini. I removed the seeds and added salt to the zucchini so that it could sweat for 10 minutes. This is to draw as much water from the zucchini as possible and prevent sogginess (see post or recipe card below for complete recipe and instructions).
- Grated Parmesan Cheese - Adds a crispy outside to the fries.
- Garlic Powder - Adds extra flavor and coating for the zucchini fries.
- Salt and Pepper
Air Fryer Instructions:
1. Slice the ends off of the zucchini, then slice the zucchini in half lengthwise.
2. Using a spoon, scoop out the seeds from the middle of the zucchini to make zucchini boats. Salt zucchini and let sit for 10 minutes to draw out some moisture (I used a pinch of salt for each zucchini boat).
3. After 10 minutes, you should see water inside the center of each zucchini boat. Pat zucchini dry with a paper towel.
4. Cut the zucchini boats in half, then slice into ½ inch thick fries.
5. To a large bowl, add the zucchini fries and olive oil and toss until well coated.
6. Add the salt, pepper, garlic powder, and grated parmesan cheese and gently toss until the zucchini fries are well coated.
7. Preheat air fryer to 390 degrees Fahrenheit according to the manufacturer’s instructions.
8. Add zucchini fries in a single layer and cook for 8 minutes until browned and crispy.
Recipe Variations And Substitutions:
Air Fryer Zucchini Fries (no breading no cheese) - Cheese can be omitted if desired. The fries won't be as crispy though.
How to Reheat Zucchini Fries and Storage Instructions:
- To reheat, preheat the air fryer to 400 degrees Fahrenheit and heat for 1-3 minutes until crispy.
- Store leftovers in the refrigerator in an airtight container for up to 3 days.

- Do not overfill the air fryer. Place zucchini fries in a single layer and cook in batches if needed.
- The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, you will need to adjust the cook time based on the air fryer you are using.
