    Yes, you can use yellow squash for this recipe. A mixture of yellow squash and zucchini works great as well.

    Equipment Needed:

    • Air Fryer

    Ingredients:

    Air Fryer Zucchini recipe ingredients in various dishes on a white marble surface: zucchini, lemon, salt, ground black pepper, melted butter, olive oil, garlic powder, red pepper flakes.
    • Zucchini - Zucchini or any summer squash can be used for this recipe.
    • Butter - I used unsalted butter. The butter will need to be melted.
    • Olive Oil - I used extra virgin olive oil.
    • Salt & Pepper - Season with salt and pepper to taste or you can use my recommended amounts in the recipe card below.
    • Garlic Powder - Garlic flavor goes so well with zucchini!
    • Red Pepper Flakes - You will need just a pinch. You can add more if you like it spicy or omit if you don’t like spice.
    • Lemon Juice - Fresh lemon juice squeezed from half of a lemon.

    Air Fryer Instructions:

    1. Cut the zucchini: Using a sharp knife, cut off the outer edges of the zucchini. Next, slice the zucchini in half lengthwise, then slice those two pieces in half lengthwise. Finally, chop the zucchini into one-inch pieces.

    2. To a large bowl, add the olive oil, melted butter, salt, pepper, garlic powder, and red pepper flakes. Stir until well blended.

    3. Add the zucchini pieces to the bowl and stir until well coated.

    4. Preheat the air fryer to 400 degrees Fahrenheit.

    5. Once the air fryer is ready, add the zucchini and cook for 7 to 9 minutes until the zucchini is tender, browned, and has crisp edges. Open and shake the air fryer basket halfway through for even cooking.

    6. Once the zucchini is done, squeeze some fresh lemon juice on top, then enjoy!

    Make Ahead Method:

    Zucchini can be chopped and stored in the refrigerator in an airtight container for up to 2 days in advance. Once ready to use, follow the recipe below as written.

    Recipe Variations And Substitutions:

    What to season roasted zucchini with? If you are looking for different ways to season your zucchini, try these:

    • Parmesan Cheese
    • Italian Seasoning
    • Cumin Seasoning
    • Yellow Squash can be used for this recipe, or any other summer squash would work.

    Storage And Reheating Instructions:

    • Store leftovers in the refrigerator in an airtight container for up to 3 days.
    • To reheat, preheat the air fryer to 375 degrees Fahrenheit and heat for 2-3 minutes until warm.

    Pro Tips:

    • The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, be sure to check on your zucchini halfway through the cooking process and adjust the cooking time as needed.
    • The longer you cook your zucchini, the more tender it will become. Overcooking will make it soggy. Don't overcrowd the air fryer. I recommend no more than 2 layers of zucchini in at a time.
    • I used 2 large zucchinis for this recipe. If your zucchinis are small, then 3 can be used.
    • Red pepper flakes are optional and can be omitted if preferred. Just a pinch of red pepper flakes is all you need. You can add more if you like your zucchini spicy.
