These Cajun butter chicken thighs are juicy, flavorful, and simple enough for a busy weeknight dinner. If you’re looking for a quick chicken recipe that’s bold, delicious and ready in under 30 minutes, then you’ve come to the right place!
Mix the seasonings: To a small bowl, mix the salt, pepper, garlic powder, Cajun seasoning, lemon pepper and Italian seasoning. Stir until well blended.
Pat the chicken thighs dry using a paper towel and season with the seasoning mixture.
Heat a skillet over medium high heat. Add the olive oil.
Add the chicken thighs to the pan, smooth side down, and cook 5 to 6 minutes. Flip the chicken and add the butter to the skillet. Cook for an additional 5 to 6 minutes until the chicken is rich in color like my photos and has reached an internal temperature of 165 degrees Fahrenheit.
Using a spoon, scoop up the butter sauce and drizzle it over the chicken.
Remove the chicken from the skillet and rest on a plate for 3 minutes. Serve with your favorite sides.

Stovetop: Reheat in a skillet over medium low until warm throughout.
Microwave: Microwave on a microwave safe plate for 30 seconds at a time until warm throughout.
Air Fryer: Reheat in an air fryer preheated to 350 degrees Fahrenheit for 4 to 5 minutes until warm throughout.
I did not add salt and pepper to this recipe because the store-bought Cajun seasonings usually have salt in them. Feel free to add salt and pepper to taste if you’d like.
Chicken should be cooked until it reaches an internal temperature of 165 degrees Fahrenheit as measured by a food thermometer.
Let the cooked chicken rest on a plate for 3 minutes before eating it to make it even juicer.
