To a small bowl, add the olive oil, salt, ground black pepper, smoked paprika, and garlic powder. Stir until well blended. Set aside.
Using a sharp knife, slice the Russet potato into ⅓-inch-thick rounds.
To a large bowl, add the potato slices. Top with the olive oil seasoning mixture and toss until the potato slices are evenly coated.
Preheat the air fryer to 380 degrees Fahrenheit.
Once the air fryer is ready. Add the potato slices to the air fryer in a single layer and cook for 7 minutes. After 7 minutes, flip the potatoes slices.
Cook for another 7 minutes until fork tender on the inside and slightly crispy on the outer edges.
Remove potato slices from air fryer, let cool, then enjoy with spicy garlic aioli, bacon aioli or your favorite dipping sauce and main dish.

Storage And Reheating Instructions:
Store leftovers in the refrigerator in an airtight container for up to 3 days.
To reheat, preheat the air fryer to 380 degrees Fahrenheit and heat for 1-3 minutes until crispy.
Pro Tips:
Make sure each potato slice has a similar thickness for even cooking.
The potato slices should be ⅓-inch-thick. Any thinner and they will crisp up like potato chips. These are tender and delicious.
Be sure to cook the potato slices in a singer layer, do not overcrowd the air fryer.
The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, you will need to adjust the cook time based on the air fryer you are using.
