Equipment Needed:
- Instant Pot 6 Quart Pressure Cooker (model used in this recipe was the Instant Pot Duo Gourmet 6 Quart Pressure Cooker)
- Cutting Board
- Chef’s Knife
- Large Wooden Spoon or Plastic Stirring Spoon
Ingredients:
- Olive Oil
- Smoked Sausage - One fully cooked 14 oz package. You can also use smoked turkey sausage, smoked beef sausage, kielbasa or smoked Andouille sausage
- Sweet Onion - you can also use yellow or white onion
- Garlic
- Red Bell Pepper
- Chicken Stock - You can also use chicken broth, beef broth or vegetable broth
- Fresh Green Beans - I recommend using fresh green beans but you can also used canned if that’s what you have.
- Russet Potato - medium to large in size
- Seasonings - Salt, Pepper, Garlic Powder
Pro Tips:
- Season to your taste. You can increase or decrease the seasoning of this recipe it you’d like.
- Layer the green beans and potatoes. You will want to make sure that you put the potatoes over the green beans and do not stir. This will keep the potatoes on top and not at the bottom where they can overcook.
- Be sure to deglaze the bottom of the Instant Pot after browning the smoked sausage and sautéing the onions. Pour the chicken stock into the Instant Pot and use a wooden spoon to scrape up all of the brown bits that may have stuck to the bottom. These bits are packed full of flavor and deglazing will help to avoid a burn notice.
- Save time by buying a bag of fresh green beans that are already prewashed and trimmed.
- Most smoked sausage comes fully cooked. Check your packaging to make sure that it’s precooked and if not, you will need to cook it thoroughly on the sauté mode before proceeding with the rest of the recipe.

Yes. You can use canned green beans in this recipe. I tested this recipe using canned green beans as well and it turned out great. The green beans were very tender and flavorful. I used 2 (14.5oz) cans of cut green beans, drained.
I recommend using chicken stock or a broth for maximum flavor, but you can also use water if that is all you have on hand.
Instructions:
1. Start by slicing and deseeding the red bell pepper. Chop the onion and cut the russet potato into 1 inch cubes. Then mince the garlic clove and cut your smoked sausage into 1 inch circles. Wash and trim green beans if needed.
2. On the control panel of the Instant Pot, press the Sauté button and wait for it to say Hot.
3. Add olive oil and smoked sausage. Stir frequently until sausage is browned, about 1 minute.
4. Next, add onion and sauté the onion until it's soft.
5. Next, stir in the garlic and red bell peppers.
6. Add chicken stock and deglaze the bottom of the pot with your stirring spoon.
7. On the control panel of the Instant Pot, press the Cancel button to end the Sauté mode.
8. Add the green beans in an even layer, then add the potatoes on top and season with salt, pepper and garlic powder. Do not stir.
9. Secure the lid on the Instant Pot. Press the Manual or Pressure Cook button and cook on high pressure for 1 minute by adjusting the time using the +/- buttons.
10. When pressure cooking for 1 minute has completed, push the quick release button to release the pressure.
11. Once the Instant Pot has depressurized and the float valve has dropped, open the lid.
12. Now let's thicken up the sauce a bit. To do this, press the Cancel button and then press the Sauté button. Simmer and stir for 30 seconds and then your dinner is ready. Be sure to press the Cancel button to end Sauté mode. Enjoy!
