I absolutely love corn. It’s my favorite! This pan-fried corn is buttery, creamy, and just the right amount of spicy. It makes the perfect side dish for summer cookouts, BBQ’s, potlucks and all the holidays. This has been a crowd favorite every time I make it!

Fried corn is a Southern side dish where corn is fried in either butter, bacon grease, or both until the corn is slightly browned and caramelized.
There are many ways to cook fried corn and some recipes call for flour. However, my recipe does not use flour.
The way I like to thicken fried corn is to add heavy whipping cream and let it simmer uncovered, stirring frequently, until it thickens.

- Skillet (I used a cast Iron skillet, but this recipe will work in any skillet)

Ingredients:
- Corn - I used canned corn in this recipe. Be sure to completely drain the water from the corn. You can use fresh cut corn from the cob or frozen corn if you wish.
- Butter - I used unsalted butter. Frying corn in butter tastes Amazing!
- Cajun Season - I used store bought Cajun Seasoning. Feel free to add more Cajun seasoning than my recipe calls for if you would like your corn extra spicy.
- Seasonings: Ground Black Pepper and Garlic Powder. I didn’t use salt in this recipe because the Cajun seasoning that I used had salt in it already. You may want to add a little salt to yours if you feel that it's needed.
- Yellow Onion - Sweet onion would work as well. Be sure to chop the onion into tiny pieces.
- Red Bell Pepper - You’ll want to chop into tiny pieces.
- Heavy Whipping Cream - or just heavy cream works as well.
How To Make Fried Corn Instructions:
1. In a medium skillet, melt the butter over medium heat. Add the onion and red bell pepper to the skillet and cook until soft. Stir occasionally for 2 to 3 minutes.
2. Add the corn to the skillet and stir until the corn is well blended with the butter.
3. Stir in the garlic powder, black pepper, and Cajun seasoning. Then let the corn cook for 5 minutes, stirring frequently.
4. Stir in the heavy whipping cream, then let the corn simmer. Stir frequently until the liquid slightly thickens, about 5 minutes.
5. Serve as a side dish for dinner, or for the holidays. This will be a favorite!
Recipe Variations And Substitutions:
- Fried corn with bacon - Try adding some cooked bacon. The flavor is amazing!
- Fried corn with frozen corn - This recipe calls for canned corn but you can use frozen or fresh as well.
- Cajun lemon butter fried corn - Try adding a dash of lemon pepper.
- Corn - Sweet corn or regular corn can be used for this recipe.
Storage And Reheating Instructions:
Store leftovers in the refrigerator in an airtight container for up to 4 days. Leftovers can be heated on the stove or in the microwave.
Pro Tips:
- Add salt as needed. I didn’t add salt to my recipe, but you can sprinkle a pinch of salt on the corn if preferred. Some Cajun seasoning blends like the one I used come with salt in them so I didn't add any additional salt to the corn.
- Add extra Cajun seasoning if you would like to make this extra spicy.
- Fresh corn cut from the cob can be used as well as frozen corn.
