- Olive Oil - Used to coat the peppers and onions so they can roast up nicely in the air fryer.
- Bell Peppers - I used yellow, red, and orange bell peppers.
- Onion - I used one large yellow onion.
- Salt & Pepper - This is the only seasoning you’ll need for this recipe. See below for other seasoning suggestions.
Air Fryer Instructions:
1. Slice the peppers and onions.
2. To a large bowl, add the sliced peppers and onions, olive oil, salt, and pepper. Gently toss until well coated.
3. Preheat the air fryer to 400 degrees Fahrenheit.
4. Once the air fryer is ready, add the peppers and onions to the air fryer and shake the basket so the peppers and onions are in an even layer. Cook for 8 minutes.
5. After 8 minutes, stir the peppers and onions.
6. Cook for another 8 minutes until the peppers and onions are tender.
7. Remove the peppers and onions from the air fryer, let cool, and enjoy!

Different seasonings to try: Try adding Italian seasoning, dried oregano, or red pepper flakes for extra spice. Taco seasoning works great if you want to make fajita veggies.

- To reheat, preheat the air fryer to 400 degrees Fahrenheit and heat for 2 to 3 minutes until warm.

- The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, you will need to adjust the cook time based on the air fryer you are using.
