If you've read my blog, then you probably know by now that I like to keep my recipes as simple as possible. These are my version of homemade ham and cheese Hot Pockets. I always have tortillas in my pantry, so that’s what I used in this recipe. I love creating recipes using ingredients that I already have on hand. That’s how I got the nickname, Munchy Goddess!

Equipment Needed:
- Air Fryer
Ingredients:
- Flour Tortillas - I used 8 inch flour tortillas.
- Ham - I used smoked deli ham slices
- Shredded Cheddar Jack Cheese
- Softened Butter
Air Fryer Instructions:
1. Stack the tortillas on a microwave safe plate, cover with a damp paper towel and microwave for 20 seconds.
2. Chop the ham into small pieces.
3. To the center of a tortilla, add cheese, ham, and more cheese.
4. Fold the edges of the tortilla in and the fold up the tortilla through the middle until closed. Repeat for the remaining 3 tortilla wraps.
5. Preheat air fryer to 380 degrees Fahrenheit and set the timer for 5 minutes.
6. Brush the top of each tortilla with the softened butter. Top with shredded cheese. Be sure to press the cheese down into the butter so it sticks.
7. Add the pockets to the air fryer, seam down, and cook for 5 minutes until the cheese has melted. Be sure to check on them halfway through.
8. Carefully remove the pockets from the air fryer. Let them cool, then enjoy!
Oven Instructions:
1. Preheat oven to 400 degrees Fahrenheit.
2. Warm the tortillas in the microwave using a tortilla warmer or covered with a damp paper towel for 20 seconds.
3. Chop the ham into small pieces.
4. Laying a tortilla flat, add ¼ cup of shredded cheese to the center of the tortilla, then add the ham, and more cheese.
5. Fold the outer edges in and then fold the tortilla up through the middle until closed. Repeat with the remaining 3 tortillas.
6. Spread softened butter on top of each wrap and then sprinkle shredded cheese on top. Be sure the cheese sticks to the butter.
7. Place the ham and cheese pockets seam down on a parchment paper lined baking sheet and bake for 12 to 15 minutes until the cheese has melted.
8. Remove the pockets from the oven, let cool, then enjoy for lunch, dinner, or a snack.
Make Ahead Method:
1. Prepare the ham and cheese pockets as directed in the recipe, but do not cook.
2. Individually wrap each pocket with parchment paper and place in a freezer bag.
3. Store in the refrigerator for up to 2 days.
4. Cook the pockets by removing the parchment paper and cooking them seam down in the air fryer for 5-7 minutes at 380 Fahrenheit until the cheese on top is melted and bubbly.
Freezer Instructions:
1. Prepare ham and cheese pockets as directed in the recipe, except don’t cook.
2. Place in a freezer bag and freeze for up to 3 months.
3. To cook from frozen, put the pockets in the air fryer, seam down, for 5 to 7 minutes at 380 degrees Fahrenheit.

Storage And Reheating Instructions:
- Store leftovers in the refrigerator in an airtight container for up to 3 days.
- To reheat, preheat the air fryer to 360 degrees Fahrenheit and heat for 1-3 minutes until warm throughout.
Pro Tips:
- Be sure to warm the tortillas before use. Otherwise, they make crack when you fold them.
- Make sure all the shredded cheese on top of the pockets is pressed down into the softened butter. This holds it in place so it doesn’t fly around in the air fryer.
- The air fryer I used was the Instant Vortex Plus 6 quart. Since all air fryers are different, you will need to adjust the cook time based on the air fryer you are using.
