- Chicken Thighs โ Use bone in, skin on chicken thighs for the best flavor. You can use boneless skinless chicken thighs if you prefer, however, you will need to lower the cook time.
- Olive Oil
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Dried Thyme
- Dried Parsley
- Smoked Parika
Instructions:
- Preheat oven to 425 degrees Fahrenheit.

- Mix the seasonings: To a small bowl, add the salt, pepper, garlic powder, onion powder, dried thyme, dried parsley, and smoked paprika. Stir until well blended. Set aside.


- Add the chicken thighs to a 9 by 13 baking dish, then pat dry with paper towel. I used a ceramic nonstick baking dish. If not using nonstick, you may want to line the baking dish with foil or parchment paper for easier clean up.

- Drizzle the chicken with olive oil, then rub or brush the olive oil all over.



- Season the chicken thighs on all sides with the seasoning mixture. Be sure to press the seasoning into the chicken.




- Bake skin-side-up for 45 to 50 minutes until the skin is crispy, browned, and the internal temperature has reached at least 165 degrees Fahrenheit. Pro Tip: Let the chicken rest for 10 minutes after baking so that the juices can redistribute throughout the chicken, making the chicken as juicy as possible.
